Overview –  A stand alone topic OR part of the Core Complete Series

As a stand alone purchase, this topic includes Intuitive Cooking, Energetic Nutrition, and Visual Rhythm – knife skills.

Using The Natural Cook methods of inventing texture, taste, and color, you can prepare tofu, tempeh, and seitan (gluten) from scratch in combinations of 18 cooking methods to further manipulate texture, flavor.  They are then incorporated tastefully into dishes.

Detailed Description

 I enjoy being adventurous, creating textures with Tofu, Tempeh and Seitan. These old-world foods with a long history in many cultures are simply derived from whole soybeans and wheat or spelt berries. This class teaches the origins of the foods from the seed itself. Once made from scratch, what do you do with it?

When I make these from their whole seed, I am in awe of the miracle. How can a little soy bean give me milk, cheese, and taste and feel like a savory patty or spicy smooth dip? I can even enjoy the texture and taste of meat without having to eat meat itself?  I’ll put these foods through several consecutively arranged methods to create interesting textures, tastes, and memorable comfort food.
