Seed proteins: Tofu, Tempeh and Seitan have a reputation of being very plain.  The are often cooked as if they were supposed to be a piece of meat.  But as a plant-protein, we have very special techniques to infuse dynamic flavors and manipulate textures to replicate meat, or to just be unique on their own.
